One-bowl Paleo Brownies with Cassava Flour

Makes 8-10 brownies
2/3 cup coconut sugar
1/4 cup plus 1 tbsp coconut oil, melted
1 egg
3 tbsp cocoa (15g)
1 tsp vanilla
1/4 cup plus 1 tbsp gluten free cassava flour
1/8 tsp salt
1/2 cup walnuts or other nuts
Directions:
Preheat the oven to 350°F and lightly grease a 9 x 5 inch bread pan with melted coconut oil.
Whisk together the sugar, coconut oil, egg, cocoa, salt, and vanilla.
Next stir in the flour just until it is incorporated, then stir in the nuts.
Baked for about 12 minutes until the brownies have puffed up and a toothpick inserted comes out clean or with a crumb or two attached.
Note: that the brownies will rise in the oven and then “fall" when they cool and become a more typical dense brownie.
